Description

• The filleting knife is mainly used for filleting (filleting) meat and fish. The thin, fine and flexible blade allows easy filleting, as well as peeling of skin and bones.
• Flexible blades are thin, highly elastic and allow precise cuts. It adapts perfectly to the cutting material, it can be cut along the bone without tilting.
• The blade is made of alloy X 55 Cr Mo V14. Each individual component has a special task: chrome (wear resistance), molybdenum (corrosion resistance), carbon (strength)
• The handle made of PP/TPE is very hard and very heat and acid resistant - in addition, it sits comfortably in the hand, which allows fatigue-free work.
• 56 Rockwell (HRC) is the perfect compromise between long sharpness and easy resharpening. If you use your knife a lot, you will be very satisfied with this balance.
